[Docs] Add UltiSnips as an alternative way of inserting unicode characters in Vim

Described another way of setting up Unicode input for Vim using UltiSnips. The file did become pretty long because snippet declarations are somewhat verbose. The snippets could alternatively be moved to a separate file in the repository.
